Christmas Series: Week 4: Peace in Waiting

Luke 2: 12-14


Our last baking adventure together for Christmas Dessert Devotion!  Take time before Christmas to slow down and enjoy this Christmas sugar cookie recipe. Week 4 is a devotional from Luke 2:12-14, “Peace in Waiting”.  Be sure to enjoy the other three Christmas devotionals in this series!

Sugar Cookies

1 cup (2 sticks) butter (softened)

1 cup sugar

½ tsp almond extract

1 tsp vanilla extract

½ tsp salt

1 egg

2 tsp baking powder

3 cups flour

Icing

4 tsp light corn syrup

½ tsp vanilla

2 cups powdered sugar

6 tsp milk

Directions:

In a stand mixer, cream butter and sugar.  Add in the extracts and egg.  Then add salt, baking powder, and slowly add flour.  Dough will be thick and sticky.

Turn out onto a flour surface and roll out evenly for cookie cutting.  Bake on 350 degrees for 6-8 minutes. Watch carefully, the cookies will not brown.

Blend the cookie icing with a mixer or by hand.  Dye the icing with liquid or gel food coloring.  The consistency will “flood” the cookie surface. For thicker icing, just add more powdered sugar.  The icing will set shiny and firm, then the cookies will be stackable.

Luke 2:12-14

This will be a sign for you: you will find a child wrapped in bands of cloth and lying in a manger." And suddenly there was with the angel a multitude of the heavenly host, praising God and saying, "Glory to God in the highest heaven, and on earth peace among those whom he favors!" 

There are a lot of things that I want to accomplish before Christmas Eve.  I am a pastor, and Christmas is a very busy time.  Lots of hallelujahs going on at Christmas.  And then there are all the to-do list items that I want to do for my family before Christmas morning.  But one of the things I look forward to doing with my young kids is baking cookies.
