Lemon Ricotta Cake

1 Timothy 4:7b-8
I’m finally back in the kitchen with a new Dessert Devotion. This Lemon Ricotta cake is light, moist, and perfect for sharing. You can even make a low-sugar version! The devotional is from 1 Timothy 4:8… “Spiritual Training”.
Lemon Ricotta Cake
1 ½ sticks butter (softened)
1 ½ cup sugar (or Swerve granulated sugar)
15 oz whole milk ricotta cheese
3 large eggs
1 tsp vanilla extract
1 lemon (squeezed juice and zest)
½ tsp baking soda
½ tsp salt
1 ½ cups flour
Powdered sugar for garnish
Cream butter and sugar. Add ricotta cheese, then cream for 4-5 minutes. Add eggs, vanilla, lemon juice, lemon zest. Sift together flour, salt, and baking soda. Then add slowly to the wet ingredients just until incorporated. Bake 45-55 minutes on 350 degrees.

Train yourself in godliness, for while physical training is of some value, godliness is valuable in every way, holding promise for both the present life and the life to come.
Many of you know that I really value being active and physically fit. This training has been with me for most of my life. Even as a kid, I was active in sports, dance, and gymnastics. As an adult, whether I had a military fitness test on the horizon or not, I have always enjoyed an active lifestyle. I find that the more committed I am to training on a regular basis, the more I see great results—whether I am trying to be stronger, or faster, or healthier.
But Paul says in 1 Timothy 4:8 that while this physical training has some value, we really need take our spiritual training even more seriously. After all, physical training can help us live a better, more active life now with the freedom of health and mobility. But promises of committed physical training only apply to this life. And no matter how active we are, at one point or another, the physical body fails us. But our spiritual training holds promise for the present life and the life to come.
