Sugar-free Chocolate Chip Cookies

Your Sweet and Powerful Words

Proverbs 16:24


Baking is my happy place, and a sweet dessert is sometimes comfort food…remember the Golden Girls? But sweet, encouraging words can change the course of someone’s day.

Sugar-free Chocolate Chip Cookies

1 cup cashew butter

½ cup swerve granulated sugar

1 egg

1 tsp vanilla extract

¼ tsp baking soda

½ cup sugar-free chocolate chips

Mix the cashew butter, sugar, egg, vanilla extract, and baking soda. Stir in chocolate chips.  Refrigerate cookie dough for 30 minutes. Roll and form cookies onto a cookie sheet covered with parchment paper or silicone mat.  Add more chocolate chips if desired.  Bake on 350 for 10 minutes. Do not overbake.  Cookies should be slightly dry on top but not look quite done. Be patient and allow cookies to completely cool before handling, or they will crumble. Enjoy!

Pleasant words are like a honeycomb, sweetness to the soul and health to the body

The other day I went to lunch with a close girlfriend of mine, and as we gazed at all of the pastries in the place, I whispered, “Girl, there are a lot of problems in this world that could be solved with a great cinnamon roll!”  I love them so much.  And we all know that while we are encouraged to not ‘eat our feelings’, can we be real?  Sometimes I do feel better after treating myself to the time to bake and eat a great dessert! Comfort food is a thing, and for me—the sweeter the better.

Yet sweet foods aren’t the only thing that can comfort.  Even more so, sweet words, Proverbs 16:24 tells us are like a honeycomb that brings sweetness to our very soul and health to the body.  You don’t have to bake a dessert every time to feel better, or to make others feel better.  Speak pleasant and kind and encouraging words to yourself and to others, and get that sweetness into your soul.
