Butter Rum Peach Cobbler

Thanksgiving

‭‭Luke‬ ‭17:11-19


This easy cobbler recipe features a butter rum sauce for next level goodness. This will be a hit for your Thanksgiving table!

Butter Rum Peach Cobbler 

1 stick butter

1 cup sugar

1 cup self-rising flour

1 cup buttermilk 

29 oz peaches in light syrup

1 tbsp sugar

½ tsp cinnamon 

1 tsp crème bouquet 

1 tsp rum extract 

1 tsp vanilla extract 

Butter Rum Sauce

1 stick butter

1 cup sugar

½ cup heavy whipping cream 

1 tsp rum extract

Directions:

Melt butter in 10-inch iron skillet.

Combine peaches (with half of its syrup), 1 tbsp sugar, and cinnamon.  Pour peaches on top of the melted butter.  Mix flour, sugar, buttermilk, and extracts.  Gently pour batter on top of the peaches. 

Bake on 350 for 40-45 minutes until golden brown. Note: Place foil-lined sheet pan on rack below the skillet to catch any dripping.

For butter rum sauce, on medium heat, melt the butter and sugar in a saucepan, stir in the cream and extract.  Consistently stir the sauce as it cooks to a golden brown. Pour part over the warm cobbler.  Reserve the rest to enjoy with your individual servings.

‭‭“On the way to Jerusalem Jesus was going through the region between Samaria and Galilee. As he entered a village, ten lepers approached him. Keeping their distance, they called out, saying, “Jesus, Master, have mercy on us!” When he saw them, he said to them, “Go and show yourselves to the priests.” And as they went, they were made clean. Then one of them, when he saw that he was healed, turned back, praising God with a loud voice. He prostrated himself at Jesus' feet and thanked him. And he was a Samaritan. Then Jesus asked, “Were not ten made clean? But the other nine, where are they? Was none of them found to return and give praise to God except this foreigner?” Then he said to him, “Get up and go on your way; your faith has made you well.”- Luke 17:11-19

During this time of Thanksgiving, it is the perfect opportunity to take a fresh and grateful look at what we already have. Only one of the ten lepers returned to thank Jesus for the miraculous healing. The parable speaks to our human posture towards thanksgiving. Is there a ten percent chance that we will say ‘thank you’? Even when we say thank you, are we in a ‘rut’ of gratitude—naming some of the same things over and over. This week, prayerfully look with fresh eyes to see some of the things you have taken for granted.
