Carrot Cupcakes

Carrot Cake Mix

1 cup of milk (in place of water)

⅔ cup oil

3 eggs

Cream Cheese Icing

1 (8oz) package of cream cheese

1 stick of butter (softened)

½ tsp vanilla extract 

¼ tsp lemon extract

1 tbsp buttermilk powder

¼ tsp salt

2-3 cups powdered sugar

Prepare and bake the cupcakes according to package directions. In a separate bowl, beat the icing ingredients with a mixer. Add more powdered sugar to make the icing thicker. Add a little milk to make the icing thinner.
